Amarena cherry

Amarena cherries are an Italian specialty. It is pickled sour cherries.

The dark cherries are a shot of bitter almond oil and vanilla inserted in a syrup of sugar, almond liqueur (such as Amaretto ), until they have accepted the almond flavor. They are used as an addition to desserts and ice cream.
