As Palmitinsäureascorbylester or ascorbyl palmitate is called the fatty acid esters of ascorbic acid. Ascorbyl palmitate is an antioxidant and an emulsifier. It is a Certified in infant formulas and follow-on formulas food additive and is thus regarded as harmless. It is run as an additive with the E number 304, which thus ascorbyl stearate (E 304 II) is called.

Production and representation

Ascorbyl palmitate is obtained by esterification of ascorbic acid with palmitic acid. In the small intestine, it is slowly broken down again into the starting materials.

Use

Mainly you will find ascorbyl palmitate in cooked meats, mayonnaise and chicken broth, where it is also used among other things as a color stabilizer.
