Banon cheese

The Banon is a soft French cheese that is produced in the summer from goat's milk, sheep's milk in the winter and at other times also from cow's milk. It is sold wrapped in Esskastanienblätter for sale.

It is a Käsespezialtät Provence and has its origins in the village of Banon in Forcalquier. Since 2003, the Banon is protected by an AOC ( protected designation of origin ).

The 6-7 cm big cheeses are wrapped in chestnut leaves to mature and tied with raffia. The chestnut leaves give the cheese a very special flavor. Depending on the maturity of the taste is mild to strong nutty. The consistency changes with increasing maturity from dry to soft to liquid.
