Beef tongue

Gyūtan (Japanese牛 タン, dt " beef tongue ", with tan as shorthand for English tongue ) is a Japanese specialty. It is made from thinly sliced ​​, grilled beef tongue.

The roots of Gyūtan go back to Sano Keishiro from Sendai and the year 1948. Originally it was cooked with salt and therefore got the name Tanshio (タン 塩, " tongue salt "). Meanwhile, it has found wide use in yakiniku restaurants and it is sold in accordance with various side dishes. In the area of Sendai, it is customary to serve the dish with barley rice and pickles.
