Bresaola

Bresaola ( [ bre'saola ] ) (more precisely, Bresaola della Valtellina ) is the protected geographical indication ( PGI; Italian IGP) for an air-dried cured beef from Italy. For this ham pieces are taken out of the club. It is milder in taste and slightly more tender than the Swiss equivalent of dried meat.

Bresaola is made in the northern Italian Valtellina ( Valtellina ), 1512-1798 a country subjects of the Free State of the Three Leagues. This introduced the production process for dried meat in the region.

In 2006, nearly 11,000 tonnes of bresaola IGP were produced.

In Carpaccio di Bresaola the thin cut slices are topped with a mixture of olive oil, lemon juice and pepper and decorated with Scaglie di parmigiano ( thin slices of Parmesan or other hard cheese) and arugula.
