Bulgur

Bulgur ( bulgur wheat, also: Boulghour, bulghur or Arabic Burghul / برغل / burgul ) is a pre-cooked ( hydrothermally pretreated ) Wheat ( parboiled ). After subsequent drying the exposed bran is removed mechanically. After the grain is coarse or fine cut with a cutter grits.

It is mainly made of durum wheat and is a staple food in Turkey and the Middle East. Bulgur, for example, such as rice with various ingredients ( vegetables and / or meat) are cooked. Also, he may be similar to the couscous in North Africa, steamed, or eaten without cooking after soaking, as tabbouleh or as Kısır ( bulgur salad ). Bulgur is also an important ingredient for the court Çiğ kofte ( raw meatballs ), which is particularly widespread in southeastern Turkey.
