Burek

Burek is a Turkish variant of a head box or swirl of Yufka dough with a spicy filling of minced meat, feta cheese, spinach or other vegetables and parsley. Variants with other dough and / or methods of preparation are very popular among various terms in the Balkans. Depending on the filling, it is an everyday or dinner and is also offered as a cold snack. In Germany Börek has been known by Turkish immigrants and is part of the standard offer of Turkish snacks and bakeries.

Preparation

To prepare Yufka - dough sheets are either alternately layered with prepared stuffing in a casserole dish (at the bottom and at the top two or three, each coated with oil or butter) or the filling - like a whirlpool - wrapped in the dough and the resulting role in screw - or S-form placed. Finally, the dough is brushed with egg yolk and bake everything in the oven. Usual side dishes are green salad and yogurt.

In the Balkans, burek is known by numerous, mostly similar names and in many variants:

  • Albania: Byrek or Pite (usually stuffed with minced meat and potato cubes or with dry and salted ricotta )
  • Bulgaria: Baniza
  • Greece: Burékki ( μπουρέκι ) or pita ( πίτα )
  • Former Yugoslavia: Burek or Pita
  • Successor states of the Soviet Union: Tscheburek ( Чебурек )
