Carnosol and carnosic acid are constituents of rosemary and sage. You reduce the risk of stroke and myocardial infarction or atherosclerosis in humans. Scientifically, this means as isolated substances are carnosol and carnosic highly potent inhibitors of lipid peroxidation in liposomal systems. They begin peroxide radicals directly from, chelate iron ions and thus blocking the formation of hydroxyl radicals. Carnosol is also a relatively specific inhibitor of arachidonate 5-lipoxygenase.
