Chawanmushi

Chawanmushi (Japanese茶碗蒸し) is a Japanese variant of egg custard, which is usually eaten as an appetizer.

The basis for this steamed egg dish with a soy sauce, dashi ( broth ), fish flakes and mirin ( sweet rice wine) flavored egg mixture is swirled. Typically, chicken eggs are used, but are also popular quail eggs.
