Chelow kabab

Tschelo Kabab (Persian چلوکباب, also Tschelo kebab, kebab or Tschelau Tschalau Kabab ) is the national dish of Iran. A typical dish of Persian cuisine of steamed rice and grilled on a skewer lamb or lamb and beef. Most often you drink Dugh it.

For the Tschelo said steam rice, the rice is soaked in water before cooking a few hours, then brought to a boil in water. At the right time the rice is removed from the heat and drained in a colander. Here, the rice may not cook too long in the water, so that it is indeed soft, but still has some bite. To cook the perfect rice is the supreme discipline in Persian cuisine. Then with a little oil, nor been newly started, where necessary, a thin flat bread and then the rice with a little cold water and butter or oil, and slowly cooked in a sealed pot over a low heat until there is a strong water vapor inside. Traditionally, the lid of the pot is wrapped with a cloth so that the pot is dense.

For Kabab mentioned skewers of lamb are marinated in oil and lemon juice with garlic and spices and then placed on flat metal skewers. The meat is filet and is called " Kabab Barg ". For Hackfleischkabab lamb and beef with onions and spices are processed into a mass. This is called " Kabab Kubide "

Served Tschelo Kabab according to Persian custom in portions by the rice is formed on the plate to a hilltop with a hollow in the center, in which you are a little butter and sometimes a raw egg, plus salt, pepper and sour Sumagh. Then finally comes the grilled meat without the skewer. Also popular is the addition of pomegranate Mark.
