Chutney

A chutney ( anglisierende transcription of Hindi: चटनी caṭnī, chatni ) is a spicy, often sweet and sour, sometimes even sharp - spicy sauce of Indian cuisine with musartiger consistency. There are also variations with fruit or vegetable pieces.

In India, many chutneys are freshly prepared for each meal and give the usually very hot curries an additional flavor component; cooled they spend around one week.

The English brought chutneys during colonial times to Europe, where it became customary chutney canned in glass jars with a long shelf life produce. A chutney, as prepared in Europe and in the United States consists of vegetables or fruits. Often, mango, tomatoes, onions, garlic, coconut or coriander leaves are used as the main ingredient, but other varieties or combinations are possible.
