Dehydroalanine (DHA ) is an amino acid with the systematic name 2- Aminopropensäure. It arises from the proteinogenic amino acid cysteine with elimination of hydrogen sulfide ( H2S).
Dehydroalanine can react further in proteins with lysine to lysinoalanine (LAL ). This reaction, which proceeds at the thermal process, leading to a crosslinking of the protein structure by means of so-called "cross- links". Thus, the degradability of the protein is affected in the human body.
In the food quality assurance LAL serves as a heating indicator especially in milk. Is the amount of LAL in the sample is too high, the milk was revealed during the heat treatment ( sterilization, pasteurization, etc. ) is either exposed to high temperatures or treatment for long.
Two enzymes with this amino acid are known: phenylalanine ammonia-lyase (plants and fungi) and histidase ( living beings).
