Egg salad

Egg salad is a salad dish of German and American cuisine. It consists of chopped, hard-boiled eggs, which are blended together with other ingredients in a mayonnaise or yogurt sauce. Typical spices are salt, pepper, cayenne pepper, lemon juice and mustard.

Variants

  • English style - with anchovies and gherkins in Gloucestersauce
  • Copenhagen way - with peas, crab and smoked salmon in Chantilly sauce
  • Provencal style - with tomatoes, green beans, onions, gherkins, anchovies and capers in Aiolisauce with herbs
