Eggplant salads and appetizers

Melitzanosalata (Greek μελιτζανοσαλάτα mɛlidzanɔsalata, eggplant puree ') is an appetizer of Greek cuisine, which is made from eggplant. These give you a typical brown - golden color.

The fried eggplant in the oven without skin and seeds are chopped and processed with crushed garlic to a puree. Olive oil and wine vinegar or lemon juice are added under constant stirring and finely chopped parsley incorporated.

Usually Melitzanosalata is served along with other appetizers and bread.
