Frankfurter Rippchen

Frankfurt ribs are a traditional specialty of the Hessian cuisine, but are also eaten in other regions, and then referred to as ribs or spare ribs.

It is cooked cured pork from the loin. Must be distinguished from Kassel ribs, for the meat is cured and smoked in addition. Ribs are usually served warm sauerkraut and mashed potatoes or bread, but partly also cold with bread, rolls or potato salad.
