A garlic press is a kitchen appliance for pressing of garlic cloves.

Function

It usually consists of a piston and a cylinder with a perforated bottom, which are operated via a pliers-like lever works. The toe is placed in the cylinder, with the top lever of the piston is pressed into the cylinder, so that the toe is driven by the small holes in the cylinder base. Was invented in the garlic press in the 1950s by Karl Zysset, the owner of the company Zyliss.

There are now many different varieties of garlic presses, all of which function more or less well. Also presses are available in which you can use the individual cloves unpeeled. Some garlic presses bring a cleaning instrument, which by a single touchdown exempt the entire grid of residues and thus facilitates cleaning.

A combination of garlic press and cutter was patented in 1998.

Pros and cons

Notwithstanding the fact that even professional chefs like to reach for the garlic press is, its use often rejected. It is claimed that the press crushing, the cells of the toe so that oxidation of the aroma and flavor of the garlic will be within the next bitter taste. Advocates of this thesis, therefore, prefer to grab a sharp knife, a razor blade or a special slicer, such as the truffle slicer to chop up the garlic.

However, according to recent studies, garlic should be preferably freshly squeezed or pinched used because garlic is crushed, according to recent studies, the healthiest. With the help of cooking experiments, it was demonstrated that by Argentine scientists. They discovered that the enzyme alliinase is released only by the squeezing of the toes. This makes the health-promoting ingredient of garlic, allicin. The enzyme further ensures that the agent survives the heat of cooking and baking longer. Allicin prevents the deposition of fats in the blood veins and thus prevents arteriosclerosis and other cardiovascular diseases before. In addition, the sulfur-containing compound, which is also responsible for the typical garlic smell, antibacterial and protects against infections acts.
