Gremolata

Gremolata is a herbal seasoning Lombard cuisine. The classic form consists of glattblättriger parsley, lemon peel ( zest ) and usually garlic that are hacked together and added hot dishes towards the end of cooking to preserve the fresh flavors.

Depending on the recipe and use more herbs such as rosemary, sage and thyme, orange zest or hot peppers, salted anchovies and parmesan cheese are added.

Gremolata is a mandatory part of ossobuco alla milanese, but is also used for fish dishes.
