Isterband

Isterband is a Swedish sausage, which is distributed mainly in the southeastern part of the country in the area of Kalmar. Ister is the Swedish name for lard.

Isterband is a coarse-grained sausage with a little sour taste. The content is usually made of pork and beef, grains, potatoes and possibly broth, the water content must not exceed 60%. The sausage mixture is pressed into a medium hog casing, salted and dried in the air, the sour taste is produced. There is also a lightly smoked version. For eating the sausage is fried and traditionally served with mashed potatoes and beetroot. Isterband is often part of the Swedish smörgåsbord.
