Khachapuri

Chatschapuri (Georgian ხაჭაპური ) is a specialty of Georgian cuisine. It is an over -baked cheese bread that is usually eaten in Georgia as a snack for the hungry.

The dough for white bread must first rise. It is then rolled, with cheese, eggs, sour cream and garlic and filled depending on the variant, other ingredients. The filled dough is even baked on a preheated frying pan with the lid closed and then spread with butter.

The Georgian cuisine has different types of Chatschapuri. They come mostly from various regions of the country. The best known are Atscharuli Chatschapuri from Adjara Sulguni with cheese and a fried egg, Megruli Chatschapuri from Mingrelien with cheese in the bread and outside, Imeruli Chatschapuri from Imereti, round with Imeretian cheese, Swanuri Chatschapuri from Svaneti, also called Tschwischtar, Ratschuli Chatschapuri from Racha and Ossuri Chatschapuri from South Ossetia with cheese and mashed potatoes. Also popular is the triangular Penowani Chatschapuri, which is made from puff pastry and Sulguni cheese.

In rural areas of Georgia Chatschapuri been eating for breakfast. In cities it is offered as a fast intermediate court kiosks, in small shops, bistros and restaurants.
