Khinkali

Khinkali (Georgian ხინკალი ) is a Georgian specialty. It is filled pastries.

The boiled dumplings are offered with various fillings, mainly with minced meat. Beef or ground pork mixed with onions, garlic, pepper and salt. Often fresh coriander, parsley or cumin is added. Other khinkali be filled with cheese and sour cream.

The thin dough is made from flour, water, salt and possibly egg. The filling is placed on circular disks of dough, then put the dough crust into folds and closed over the filling. They are cooked in salted water and served with melted butter and coarse black pepper. Depending on the region khinkali have a different number of folds.

Khinkali be eaten by hand. It takes you to the top of the pastry (Georgian kudi "hat "), which is cooler than the content. Man bites off some dough and drinks the juice from the bag, then one eats the rest, because the tip is hard, it is not eaten, but set aside. At the end of the meal can be counted how many pies each diner has managed.

The court is originally from the Georgian mountains. The cities Dusheti, Pasanauri and Mtskheta are known for the quality of their khinkali.
