Khmeli suneli

Chmeli Suneli (Georgian ხმელი სუნელი, " dried herbs ") is a Georgian herbal mixture that is spread throughout the Caucasus region.

It consists mostly of equal parts of dried, ground or grated coriander, dill, basil, bay leaf, marjoram, savory, tarragon, saffron and a hint of safflower and black pepper. Sometimes even celery leaves, parsley, thyme, mint or lemon balm, hyssop, and fenugreek are included.

The mixture is a typical ingredient Georgian sauces. These are spicy, slightly sour and usually are prepared with fruits, nuts and just Chmeli Suneli. In addition, the spice mix is part of typical local stews.
