Lavash

Lavas (Persian لواش, լավաշ Armenian, Azeri and Turkish lavas ) is an unleavened flatbread, which is used mostly in Armenian, Azerbaijani, Turkish and Persian cuisine. The dry Lavas place as host in the Armenian church use.

Production

The three ingredients of the original recipe are only flour, salt and water. The dough was placed on the hot surfaces of the oven and spread into smaller patties or in very large with a diameter up to 40 cm. It is considered the most eaten bread in Armenia and Iran. In the United States a similar version of this bread, which is somewhat softer exists to pursue in food can. Freshly prepared Lavas can be easily shaped, but it dries quickly and is then crispy. That is why fresh lavas is designed as a wrap or as rolled kebab sheath ( called in Turkey Dürüm ) used.
