Lemon sole ( Microstomus kitt )

The lemon sole or lemon sole ( Microstomus kitt, Syn Pleuronectes microcephalus ) is a rechtsäugiger flatfish with wide - oval body, small head and small mouth opening. The coloring of the skin is very smooth above reddish to yellow- brown to dark brown with orange mottling. On the blind side is white. It lives mostly on rocky soils at depths of 10 to 200 meters. Their diet consists mainly of small invertebrates, predominantly bristle worms.

Reproduction

The fish spawn from April to August in depths of 50 to 150 meters. The eggs are pelagic, and have a diameter of 1 to 1.5 mm. The larvae hatch for a week and then for about 4 to 5 mm long. With a length of 1.5 to 2 inches the first pelagic larvae move on to the soil life.

Culinary

The lemon sole is a high quality food fish. It is mainly caught in winter with trawls. Likelihood of confusion with the culinary not evenly matched dab ( Limanda limanda ), which is often also traded as lemon sole basis of their Latin name.
