Lipoxygenase
Lipoxygenases are enzymes which oxidize several times unsaturated fatty acids having two oxygen atoms. They thus belong to the group of dioxygenases. Various lipoxygenases play a role in the arachidonic acid metabolism of mammals and in the plant linoleic acid metabolism, among others. Enzymes have up to three iron ion in their catalytic site as a cofactor.
