Ndolé

Ndole (also Ndole and N'Dole ) is a national dish of Cameroon. It is originally a dish of Duala, but is now all over the country and also in other countries in West Africa popular. In the family, religious and social festivals in southern Cameroon, where usually many different dishes are prepared, Ndole is almost always there. As side dishes often serve fried plantains or yams.

Ingredients

The main ingredient is the same leafy vegetables which is also known as bitterleaf or bitter spinach. It is the young leaves of Gymnanthemum amygdalinum ( Delile ) Sch.Bip. ex Walp, who belongs to the tribe Vernonieae. It is similar to cooked like spinach and has a slightly bitter taste. Other common ingredients are fresh, ground peanuts, garlic, onions, ginger, meat and dried shrimp. However, many variations are possible. The whole thing is cooked like a stew.
