Paški sir
Pag cheese ( kroat. Paški sir ) is a sheep's cheese specialty, which is produced on the island of Pag in Croatia.
This cheese is made from the milk of a free-living, midgets ovine, who lives on the island. The special flavor of Paški sir is influenced by several factors: Because on the karst underground of the island of Pag little grass grows, the 28,000 sheep feed mainly on wild and salty herbs.
By four to six -month maturation and air drying of the cheese its special flavor. From 64 liters of milk 10 kg of cheese can be made.
