Occurrence
Perillaaldehyde occurs naturally in perilla oil and cumin. General occur in nature before both enantiomeric forms.

( S) - ( -)- perilla is a yellow oily liquid.
Use
( S) - ( -)- perillaldehyde is used as starting product for the production of nature-identical substances. Its oxime perillartine ( perilla sugar) is 2000 times sweeter than sugar and is used in Japan as a sugar substitute.
