Phaseolin (also: vicilin, Pha v - allergen) is the major reserve protein of the species of beans ( Phaseolus and Vicia genera ), for example, the common bean (Phaseolus vulgaris). It is a mixture of several glycoproteins, formed during seed development. It has a share of 30 % -50 % of the seed proteins and acts as an allergen in humans.
Construction
