Pico de gallo

Pico de gallo [ piko ðeɡaʎo ] (Spanish for "rooster 's beak" ) is a fresh condiment made from chopped tomato, onion and chili peppers (typically Serrano chilies or jalapeños ). However, the salsa can be accompanied by other ingredients, such as lime or lemon juice, coriander leaves, avocado, cucumber and radishes.

In some regions of Mexico the name Pico de gallo also called a spiced with lime juice and a salty chili powder fruit salad, while the Salsa rather Salsa picada ( " chopped sauce " ) specified therein or salsa mexicana, because the colors of the Mexican flag red ( tomato), white ( onion ) and green (capsicum) contain.

Pico de gallo can be used as other Mexican salsas or Indian chutneys. However, since it is thicker, it also comes as the main ingredient found in dishes such as tacos and fajitas.

Origin of the name

The origin of the name " rooster 's beak" could be the beak-like shape and the red color of chili peppers, which are required for the production of pico de gallo. Another explanation is that the tongue feels like it after eating the very hot chilli, as if a rooster picked over to her. According to another view, the name comes from the fact that the salsa was originally eaten with the thumb and forefinger, and this process is similar to the picking of a rooster.

Another plausible explanation assumes that pico is derived from the verb picar that has two meanings: 1 " chop " and second " bite " or " sting ". The rooster, gallo in Spanish, on the other hand is a common metaphor for the male macho in the Mexican culture. A typical macho theme is the pride to be able to withstand the sharpness ( picante ) of chilli.

The problem with these theories is that they are based on the use of hot chilli. In many regions of Mexico, the name Pico de gallo, however, refers to a variety of salads, condiments or fillings made of sweet fruits, tomatoes, tomatillos or mild chilies, but not necessarily with hot chilli, or even with chillies. For this reason, the name is an allusion to the bird feed -like ( " chopped " ) consistency could also simply be the sauce.
