Piperade

Piperade or Piperrada is a traditional Basque ( aquitanisches ) Court, which consists of onions, garlic, sauteed in olive oil, tomatoes and green peppers and topped with whipped eggs and then has about the consistency of omelets.

Today, also known as a court in vegetarian cuisine, but is typically added in strip cut, seared Bayonne ham. To prepare the dish in its original form, Piment d' Espelette ( a small red peppers from Espelette of the community ) should be used. This type pepper omelette can be served as a main course or side dish.
