Polyglutamic acid

The polyglutamic (PGS ) are a group of polymers that are composed only of the amino acid glutamic acid.

γ -PGA, the form in which the peptide bond between the amino group of glutamic acid and the carboxy group at the end of the side chain are Glutminsäure, is a major component of the mucilaginous substance, which is formed during the preparation of the Japanese food natto. γ -PGA is synthesized by bacteria, archaea and Cnidaria and is used by such animals as slimy protective layer, glue and possibly as a reserve substance.

α -PGA is chemically accessible

Polyglutamic acids are for the pharmaceutical industry on the one hand due to their immunological neutrality interesting as packaging for medicines, on the other hand could facilitate infection control, immunization with polyglutamic. PGS is an ideal moisturizer for the food and cosmetic industry.

Short γ - polyglutamic acid chains (oligomers ) are briefly created as a degradation product in the metabolism of many organisms in the degradation of tetrahydrofolate - polyglutamate by the enzyme Gammaglutamylhydrolase ( EC 3.4.19.9 ). However, they are immediately broken down further into the glutamic acid constituents.
