Potato bread

A potato bread is generally a bread whose dough has been mixed with grated ( raw, cooked or flaked ) potatoes. One example is the Riewekooche, a Siegerländer specialty bread. Frequently the potato bread nuts or roasted onions are added to give the flavor a rustic touch.

Historical

The Office of Justice under Hermann Lisco was in 1914 via the Ministry of the Interior a report commissioned

" [ ... ] Whether the replacement of the products to be supplied by the diet order for prisons administration of justice from March 31, 1908 bread [ ... ] can be recommended by potato bread [ ... ] "

And came to the conclusion that there is the addition of 20 % potato flakes due to the reduced protein fraction - were to be used for the prisoners food only with reservations - despite due palatability.
