Qâlat daqqa

Qalat daqqa, gâlat dagga or Tunisian Fünfwürz is a spice mixture from Tunisia. However, it is also used in other North African countries, in all but in Morocco. It is mainly used for sharpening stews.

Composition

Qalat daqqa traditionally consists of grains of paradise, black peppercorns, cloves, cinnamon and nutmeg. The ingredients are ground to a fine powder and then mixed.

Use

Qalat daqqa is used for sharpening of food, primarily relates to the stews and is an important ingredient in the lamb tagine. Meat is rubbed with the spice mixture dry before frying or marinated. In vegetarian dishes, particularly on the basis of eggplants and pumpkins, the mixture for a warm aroma ensures.
