Quarkkäulchen

Quarkkäulchen ( medium German fabric roll " ball " ) or Quarkkeulchen, Vogtland region called Baked Kließ or Quarkkließle, are flat, pan-fried dumplings from a Saxon and quark dough dessert.

The dough is 2/3 of grated potatoes and 1/3 of lean cottage cheese, eggs and flour, flavored with sugar, cinnamon, vanilla and grated lemon peel. The refinement can be added raisins. The Quarkkäulchen that resemble potato pancakes in shape and size, are traditionally baked golden brown in linseed oil. However, it can also be used ghee.

Quarkkäulchen are served with applesauce or sprinkled with sugar.
