Rassolnik

Rassolnik (Russian рассольник ) is a slightly sour meat or fish soup of Russian and Ukrainian cuisine. The special flavor is produced by finely chopped pickled cucumbers and its Lake.

To prepare cucumber brine is heated (depending on taste diluted with water ) and beef cooked in it. Is the beef soft, it is taken out, crushed, and, with chopped root vegetables, onions, peppercorns and bay leaves back in the pot. Then the soup is again boiled for 10-15 minutes and seasoned with garden herbs (especially garlic leaves). The pickles are added until a few minutes before the end of the cooking time because they overcook otherwise.

Instead of beef and fish can be used.
