The red fruit jelly ( Low German Rode Grütt ), a typical specialty of northern Germany and Scandinavia, is a sweet, are bound at the various red fruits with the addition of sugar and some fruit juice with cornstarch or similar thickeners. In the original version of the red groats semolina or sago is used as a binder

It is preferably served as a dessert with a little milk or lightly whipped cream, often with vanilla sauce. Gladly it is also eaten with a little crumbled biscuits.

The recipe is closely related to the Eastern European Kissel, known in Poland, parts of Russia, Lithuania and Ukraine.

General and variants

The name groats explained by the fact that the red grits originally made using grits or sago and fruit juice ( and without the addition of whole fruit ) was prepared.

For classic recipe red and black currants and raspberries are used. The use of strawberries is not recommended, as they at the heating acidity and fruit lose consistency, mushy and sweet. However, other recipes use any berry fruit that just accumulates in the garden, even those that are not red. From green gooseberries ( often in combination with kiwi and pineapple ), the green grits, from peaches, yellow gooseberries, pineapple, bananas, kiwi gold or other yellow fruit yellow fruit jelly is made.

Preparation

Basic ingredients for red grits are red fruits, fruit juice, sugar and starch or tapioca. The fruit and the juice are put into a pot. The amount is briefly brought to the boil. If sago used, it must soak them in advance 20 minutes and simmer a little longer. When using regular cornstarch vary quantities. 50 grams to the liter of the final recipe is a mean indication; it is recommended here, dissolve the starch in fruit juice and then quickly stir in the ground, which should previously be cool for about 15 minutes. The thickening sets in a second cooking process one after a minute or two, which can be terminated if the whitish strength has cleared. Finally, pour into a bowl and set aside for cooling at least five hours. Fresh red berry compote keeps in the fridge for five to six days.
