Roast beef

Roast beef is another name for the roast beef, but also the name for a variety of dishes, all prepared with roasted or braised meat slices from the back of beef or pork.

Typically, the Viennese roast, for a finger-thick slice from the ribeye ( sirloin ) beef seasoned with salt and pepper and flour dusted is seared in butter, cooked with onion slices and garlic over and the gravy is mounted over with some vinegar and butter.

In the Swabian cuisine it is garnished with fried onions and usually served with roast potatoes, spaetzle, or sauerkraut.
