Roncal cheese

Roncal is a hard Spanish cheese from Navarra with a protected designation of origin ( Denomination of Origin Protegida, short DOP).

It is made from sheep's milk of sheep breeds Latxa and to a lesser extent Rasa in the Roncal Valley. It is a mild to medium spicy hard cheese that matures according to DOP regulations at least four months.
