Samgyeopsal

Samgyeopsal is a popular Korean dish. Samgyeopsal is cut into more or less thin slices of pork belly.

Origin of the name

The word Samgyeopsal consists of three syllables sam ( 삼 ) ( "Three" in the Sino- Korean counting ), gyeop ( 겹 ) ( " documents") and sal ( 살 ) ( "flesh "). The term derives from the fact that alternate layers of meat and fat in the pork belly slices. It does not matter basically if there are exactly three or more layers now.

A variation is the Ogyeopsal ( 오겹살 ). The syllable o ( 오 ) means "five " in the Sino- Korean counting. This pork belly is called, in which the pig skin was not removed, but is mitgegrillt. The exact name of this is Ggeobdaegi Ogyeopsal ( 껍대기 오겹살 ). The word ggeobdaegi ( 껍대기 ) means skin, crust or shell.

Preparation

Samgyeopsal is mostly consumed as dinner. More or less long thin pork belly strips are fried in the middle of the table on a grill. The fat in the meat disappears into the gutters of the grill. What remains is the roasted meat. Depending on personal taste, it is weak to strong crispy fried.

Onions, garlic, mushrooms and other ingredients are often used with the meat still placed on the grill to give the dish a special flavor.

Consumption

Before eating the meat is cut with scissors into bite sized pieces. The cut pieces are usually pushed to the edge of the grill to create the same room for the next " charge ".

With Chopsticks the meat trimmings are taken from the grill and dipped in a sauce according to personal taste. As sauces are mostly Ssamjang ( 쌈장 ), Korean chili sauce Gochujang ( 고추장 ), fermented soybean paste doenjang ( 된장 ) or Gireumjang ( 기름 장, a mixture of salt and sesame oil) used. Then you can put the pieces of meat together with other supplements on a lettuce or sesame leaf, roll and slide as a whole in the mouth. Typical side dishes are a range of vegetables, Gimchi, garlic cloves, mushrooms or grilled onions.

Overall, Samgyeopsal can be enjoyed on many different types, which in turn leads to the large popularity.
