Sfogliatelle

Sfogliatelle [ sfɔʎʎatɛllɛ ] (from the Italian sfoglia = puff, singular Sfogliatella ) is an Italian specialty pastries from Naples (Campania ). The pastry comes from the Convent of Santa Rosa near Salerno and is the present form of a cone-shaped puff pastry with a sweet ricotta filling with cinnamon and orange blossom aroma. The special feature of the puff pastry is that the puff pastry layers are not parallel like a croissant, but fanned. This is achieved by a special preparation of puff pastry.

In Italy, there are two variants of the Sfogliatelle that Sfogliatella riccia (from the Italian riccio = curly ), which is considered the original version from Naples and the typical puff ribs, as well as the Sfogliatella frolla consisting of pastry instead of puff pastry and are therefore easier to produce. There for special occasions, and particularly in the commune of origin nor the variant Santa Rosa with a fruit filling. In addition, in the United States of America with a variation of puff pastry and a filling of custard that there exists lobster tails are called ( by English = lobster tail).
