Sorbet
Yogurt [ zɔrbe ː ], also outdated sherbet, is the name for an ice cold drink or a semi-frozen dessert of fruit juice, fruit puree and sugar. There are also sorbets containing fruit juice instead of champagne or wine. Classic is the lemon sorbet.
The mass is stirred several times during freezing to keep the sorbet smooth.
Acid sorbets as a drink are often served as an intermediate course in a multi-course menu because they stimulate digestion and reduce the feeling of satiety. As a semi-frozen food, they are a dessert. They also serve the neutralization between courses.
History
The Arabic word شربات / šarbāt /, potion ' for a cold, non- alcoholic beverage was taken around the 16th century through the agency of the Turkish ( şerbet ) in other European languages , as in the Italian sorbetto, in French as sorbet. The form of the preparation of the drink also comes from the Middle East. It was there only served on special festive occasions. In Turkey, the sorbet was then introduced as a refreshment between several courses at banquets, it was there and in Egypt but also to an everyday beverage on the basis of fruit syrup.
In the 17th century sorbet was in France a drink of water, sugar and lemon. Only in the 19th century there was also a semi- frozen dessert denote the best- contained alcohol and slurped more than was eaten with a spoon.
In German dictionary of the Brothers Grimm sorbet is still in the 19th century as " süszes cooling drink by Turkish and Persian art, in the simplest form of an infusion of water to raisins made , further prepared from lemon juice, sugar and amber or style in manifold other, described also enjoyed frozen ", the Grimm brothers from the lexicon of Jablonski ( 1727) quote, which was already almost 150 years old.
End of the 19th century, it is then called in an Austrian lexicon as a semifreddo with fruit wine additive, which will served before the main course in glasses. As known variants woodruff sorbet from water, wine, sugar, orange and lemon juice with woodruff and a Yankee sorbet called American style of fruit syrup, water, wine and lemon.
