Sprouted bread

Essene bread is a whole wheat bread that is made from 65 to 100 percent from germinated cereals and baked or dried.

Origin of the name

The name goes back to the Essenes, a group of ancient Judaism, whose members have reportedly made flatbreads from germinated cereals and dried in the sun. To support this claim, it is referenced by Edmond Bordeaux Szekely translated " gospel of the perfect life." The existence of the Hebrew original text is, however, not been established. Nevertheless, in the early 1980s was started to offer breads from sprouted grain as Essene bread.

Production

A unified procedure is not widespread. In all processes the use of germinated cereals is only equal to its proportion varies strongly. Sprouted grain is poor breadmaking quality ( the so-called outgrowth ), so flour or seed mixtures may be added with different proportions. Also, no single method of relaxation is widespread. As a leavening agent used sourdough, Backfermente, yeast or just the enzymes produced during germination. While some producers bake at conventional temperatures, others try to keep this as low as possible. (Examples: 270 falling falling to 200 ° C, 180 to 140 ° C, etc.). For raw food thin patties are dried at a maximum of 40 ° C so as not to damage the enzymes. The consistency of the bread varies from loose to tight and sticky, the taste of sour to sweet.

Nutrient content

In many cases, it is considered, Essen bread is particularly rich in nutrients and low in lectins. Germination of the grain starts with the activation of the enzymes which are necessary for the starch and protein degradation as well as vitamin form. The protein and gluten degradation depends on the germination conditions and can be in favor of better baking properties delayed by low temperatures. On the other hand, the content of several vitamins at low temperatures significantly. Also in the baked bread, increased vitamin content is measurable. Also, phytic acid is partially degraded, rye more than wheat, so the minerals are more available.
