Stringozzi

Stringozzi is an Italian type of pasta.

The Stringozzi ( strangozzi ) come from the Italian region of Umbria and are in consistency before cooking soft. They are similar to the spaghetti in shape, however, much thicker and softer. They are made from durum wheat semolina, white flour, egg whites, olive oil and salt. They are used predominate in combination with more hearty sauces. The name Stringozzi derives from the Italian word stringhe, which means as much in German as laces, which also fits describing the shape of Stringozzi.
