Succade

Candied lemon peel or Citronat (also: candied peel or succade, from Latin succidus ) is produced by carding from the skins of citron (Citrus medica ). Main areas of cultivation of citron are Italy, Corsica and Greece.

Candied lemon peel is green to yellow, depending on the ripeness of the fruit. The sugar content is at least 65 %, further trace amounts of sodium chloride ( from candying ) and sulfurous acid ( as a preservative) before. Candied lemon peel is used as a baking spice use, such as stollen.

A similar product from bitter orange ( bitter orange ) is orange peel.
