Tapenade

The tapenade is a native of southern French cuisine olive paste. The main components are pitted olives, anchovies and capers ( tapenos ). It is used as a spread or dip sauce.

In aberrant usage of the word, other spreads are called tapenade, such as the tomato tapenade, which is based on dried tomatoes and olives do without.
