Tiger bread

The Tiger bread ( Dutch: Tijgerbrood ) is a yeast bread made ​​of different types of flour. It comes from the Netherlands. It is particularly known also in England under the name of Dutch crunch or tiger bread.

Etymology

The name has the tiger bread from his cracked crust, which, paradoxically, but more reminiscent of a leopard skin.

Production and ingredients

The basic dough is made of wheat flour, the breadcrumbs softened in water and dissolved yeast is added. For the dough also sugar and sesame oil is added.

Before the dough has fully extended, the outer layer of dough in a slurry of rice flour, boiling water, sugar and sesame oil is incorporated. Since rice flour is gluten free, it does not expand and there are the typical cracks. The width of the cracks can be controlled by the thickness of the slurry.
