Valeric acid ( also pentanoic acid ) is a carboxylic acid from the same group of four isomeric pentanoic acids. The short-chain fatty acid can be obtained from the root of the European valerian (Valeriana officinalis), which, however, contains predominantly the isomeric isovaleric acid. Valeric acid is not to be confused with valerenic, a sesquiterpene that occurs also in a Baldrianart.

The salts and esters of valeric acid hot Valerate ( valerianates ). Taste, the methyl, ethyl, allyl, isoamyl and valeric acid ester of the corresponding methyl, ethyl, allyl and isoamyl alcohol and fruity smell and can be used as artificial flavors. Valeria acid by itself as the homologous butyric an unpleasant odor.
