Vin Jaune

The Vin Jaune (French for yellow wine ) is a wine of the wine region of Jura. It is made exclusively from one variety of grapes: the white variety savagnin. The oldest Rebparzellen are located near the town of Château- Chalon, France. On the palate the wine Sherry, with whom he is often compared similar. A big difference, however, is that the yellow wine is not aufgespritet.

After fermentation of the must, the wine for at least six years and three months must still be in a oak barrels. In this maturation period evaporate up to 40 % of the wine. This long ripening period also explains the high price of the wine, which is usually at about 30 euros per bottle. The bottles have only a capacity of 620 ml instead of the usual 750 ml The wine is bottled in a special bottle shape, the Clavelin. After bottling, the wine is very long lasting. Storage times of 40 to 50 years are not uncommon.

Vin jaune is produced under the following Appellations Contrôlées ( Ursprungsdenominationen ): Côtes du Jura, Arbois, L' Etoile ( wine region ) and Château- Chalon. The Ursprungsdenomination Château -Chalon contains only about 50 hectares spread over five neighboring villages: Château- Chalon, Voiteur, Menetru -le- Vignoble, Nevy -sur -Seille and Domblans.
