In xanthohumol is a prenylated plant polyphenol, which is assigned to the chalcones and so far could be exclusively detected in the hops. Here, the bitter varieties a significantly higher content of xanthohumol on the aromatic varieties. When brewing process xanthohumol is largely converted by heating in isoxanthohumol.
In tests, xanthohumol showed to be effective against the formation and development of cancer cells. The chemopreventive effect of isoxanthohumol is significantly lower. The Hoepfner brewery in 2004 developed a patented process to brew beer with an increased Xanthohumul content.
