Ymer (dairy product)

Ymer is a Danish, yogurt -like sour milk product that is available in Denmark since 1930. Yoghurt as it results from the addition of lactic acid bacteria, especially of the species Lactococcus lactis, but contains more proteins. The thus produced sour milk is then removed from whey, which increases the dry matter. Finally, the Ymer was ground smooth cylinder, which gives it its special creamy texture.
